Miracle Muffins http://www.miraclemuffins.com/ Thank you! Dry Ingredients: 1 cup oat flour 1 cup oats 1 tsp baking powder 3 Tbspn. Pumpkin spice or fine ground mulling spice 2 Tbspn. Brown sugar (optional - for flavor not sweetness) ¼ cup nuts (optional - almond slivers, pecan pieces, walnut pieces) Wet Ingredients: ½ cup oil (safflower, canola, corn) 16 packets of Splenda 1 egg 1 Tbsn vanilla ¼ tspn salt 1) PREHEAT oven to 375°F. 2) In your mixer, blend all the dry ingredients for 3 minutes on low speed. No mixer? Put them in a plastic box with a tight light and shake, shake, shake! 3) Whisk all the wet ingredients together. When adding the SplendaTM and salt, spread them evenly on the surface of the oil/egg mixture. Whisk well. 4) Mix dry and wet ingredients in your mixer or by hand until you see no more dry spots. 5) Drop tablespoon of dough on a baking sheet with parchment paper (or lightly greased) about 2 inches apart. Flatten cookies a little to help them cook more evenly. 6) BAKE ?bake cookies for 10-11 minutes (or until lightly brown). Cool for 1 minute and move to a wire rack (to stop the cookies from overcooking). Let cool and Enjoy!
